One way we love pumpkin this time of year is in pancake-form, and we love this version from Cooking Light – and their quick video really shows how easy this breakfast is! Plus, this recipe is packed with protein so the pancakes are fueling and filling. Enjoy them with some homemade applesauce on your next cozy morning.
Pumpkin Pancakes from Cooking Light
Ingredients
2 eggs, whisked
1/2 cup pumpkin puree
1 teaspoon vanilla
1 tablespoon whole wheat flour
1/4 teaspoon cinnamon
1/4 teaspoon ginger
1 teaspoon pumpkin pie spice
Instructions
1. Combine eggs with vanilla and pumpkin in a bowl. In a separate bowl, mix flour with spices.
2. Combine flour mixture slowly into the pumpkin mixture, stirring until smooth.
3. Heat a large nonstick griddle over medium-high heat. Spoon 1/4 cup of batter per pancake onto the nonstick griddle. Cook for 3 minutes each side. Enjoy with desired toppings.
Makes 4 pancakes (serves 1).
