We love a good potato pancake any time of the year, but especially when celebrating the holiday season. They aren’t known as being the healthiest dish so we scoured the internet for some alternative takes on the Chanukah favorite. We’re whipping up a baked version with sweet potatoes. What about you? Baked Sweet Potato Latke
Sweet potatoes provide 400% of your daily requirement of vitamin A, have more vitamin C, fewer calories, more fiber and fewer total carbs than white potatoes. Baking instead of frying removes practically all of the fat and most of the (unhealthy) calories.
Ingredients
2 pounds grated sweet potatoes
1 medium onion, finely chopped
2 eggs, beaten
¼ cup flour
¼ teaspoon baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
Directions
1. Preheat the oven to 400ºF. Coat two baking sheets with cooking spray.
2. In a large bowl, combine all ingredients. Drop by quarter-cupfuls onto the baking sheets. Flatten with a spatula.
3. Bake for 25 minutes. Flip and bake for an additional 10 minutes.
Makes 15 latkes.
