Strawberry Shortcake Smoothie from Tara Stiles

Our friend and favorite yogi, Tara Stiles, blends up a smoothie so good it’s practically cake in a cup. Try her hearty take on a Strawberry Shortcake Smoothie from her book, Make Your Own Rules Diet. This smoothie has been one of her faves for a long time – watch her whip it up here!

While the recipe calls for 1 cup of almond milk, add more (or add water) to get the consistency you like. The bulk of the calories (and therefore most of the carbs, fat, and protein) come from the cashew nuts – a natural source that yield a creamy mild flavor. We find this smoothie to be a satisfying and filling breakfast or lunch – enjoy!

Strawberry Shortcake Smoothie
Ingredients
1 1/2 cup frozen strawberries or 1 cup fresh (not frozen) strawberries and 1 cup ice
1 cup rolled oats
1 cup cashews
1 cup almond milk
1 tablespoon maple syrup
1 teaspoon vanilla extract
1 teaspoon cinnamon

Instructions
1. Blend it.
2. Share it.
3. Enjoy!

Makes 2 large smoothies, or 4 smaller smoothies.
