Two Summer Sandwiches

Looking for a perfectly portable lunch, post-workout meal, or planning a picnic? We’re loving this collection of sandwich recipes from PopSugar, and have two favorites to really sink your teeth into. #1 – Veggie Sandwich with Hummus
Ingredients

2 slices of sprouted whole-grain bread
2 tablespoons hummus
3 thin slices of cucumber
2 thin slices of tomato
3 slices of avocado
1/4 cup alfalfa sprouts
1/4 cup grated carrots

Instructions

1. Toast your bread.
2. Spread one tablespoon of hummus on each slice of bread, layer up your veggies, and enjoy!

Makes 1 sandwich.

#2 – Avocado Chicken Salad Open-Faced Muffin
Ingredients
For the chicken salad:
1/4 avocado
2 tablespoons plain yogurt
1 teaspoon lemon juice
3/4 cup shredded chicken, precooked

For the sandwich:
1 whole wheat English muffin
Handful of lettuce or sunflower sprouts
2 slices tomato

Instructions
1. In a small bowl, mash the avocado together with yogurt and lemon juice until completely combined.
2. Add the chicken to the bowl, and mix with a spoon until all the chicken is coated.
3. Serve your chicken salad on top of a bed of lettuce, or split on top of two English muffins with a tomato slice and sunflower sprouts (as pictured).

Makes 1 sandwich.
